Let me sum up what Thanksgiving means to me in two simple words: cranberry sauce. This was the first thing I was allowed to cook in our house while growing up, and I distinctly remember my dad putting me in charge of making it each and every year starting when I was about 8 years old. I am confident that this was due to the fact that the process of turning something so tannic and bitter into an intoxicating and intensely complex concoction took an incredible amount of time and stirring, thus reducing the chances of me embarrassing my parents in front of family and friends. The smells of those jewel-like berries simmering away, mingling and dancing with citrus and spice... it's enough to make you swoon. Twenty-five years have passed since then and I can honestly say that I am still mesmerized by this side dish that embodies the perfect balance of sweet and tart.
