The co-owner of acclaimed Miami restaurant and bar Jaguar Sun talks about how he and his business partner completely reinvented their establishment to stay open last year.
Will Thompson has created bar programs for some of Boston's most prominent restaurant and nightlife venues, including Yvonne's, Ruka and Felipe's. He was also previously the head bartender at Drink, where he helped guide the bar, part of the Barbara Lynch empire, to a Tales of the Cocktail World's Best Cocktail Bar award in 2013. After a year as the national brand ambassador for Grand Marnier, Will moved to Miami to put down roots and open Jaguar Sun. Since opening in 2018, Will has received national and local recognition and accolades for Jaguar Sun, including winning Eater Miami's Bar of the Year and being named one of the Ten Best New American Cocktail bars by Tales of the Cocktail.
