We already know what’s making us fat: greedy food suppliers, greasy fast food chains, and overstocked grocery stores. Can we turn these problems into a solution? Hank Cardello, a former food-industry exec who began his career marketing Betty Crocker cake mixes has a new take in his book, suggests we can in Stuffed: An Insider’s Look at Who’s (Really) Making America Fat. Cardello suggests that food companies and vendors unite to form a Food Superfund so that they can address these problems on their own before government forces them to. His main solution is “stealth health,” where companies improve their recipes without informing the public. According to the LA Times, Cardello “wants Americans to have their healthful cake and enjoy eating it too.”
