California foodies rejoiced Wednesday at the news that foie gras could return to restaurant menus. U.S. District Judge Stephen V. Wilson overruled the state’s ban on the sale of fatty goose liver. Foie gras sales were prohibited by a law passed in 2004 that went into effect in 2012. Wilson ruled the law was unconstitutional because it interfered with federal regulations on poultry products. A coalition of animal rights groups, including the Humane Society, have already vowed to appeal the decision.
